Sheet Pan Chicken Fajitas
Nonstick cooking spray or olive oil
1 pound boneless skinless chicken breasts, sliced into 1/2-inch strips
1 store-bought fajita seasoning packet (no sugar)
1 red bell pepper, sliced into strips
1 yellow bell pepper, sliced into strips
1/2 large white onion, sliced into strips
- Preheat oven to 400°F.
- Spray a sheet pan with nonstick spray or drizzle about a tablespoon of olive oil, add the vegetables, and toss to coat. Season with salt.
- Sprinkle the fajita seasoning all over the chicken and toss to coat. Add chicken to the sheet pan on top of the vegetables.
- Bake for 20-25 minutes, until the internal temperature of the chicken reaches 165°F.
- Serve with sour cream, guacamole, cheese, cilantro, and/or limes. Lettuce wraps, if desired.
