Pesto Shrimp and Zucchini Healthy Super Bowl
4 cups zucchini spirals
1/2 cup your favorite prepared pesto
4 oz shrimp
2 TB Olive Oil
3 garlic cloves, minced
1-2 TB Old Bay Seasoning - sprinkle enough to coat shrimp
slice of Lemon
salt & pepper to taste
- Heat 1 tablespoon oil in a large skillet over medium-high heat. Add garlic and cook, stirring, for 30 seconds. Add shrimp and sprinkle liberally with Old Bay; cook, stirring occasionally, until the shrimp is almost cooked through, 3 to 4 minutes. Transfer to a large bowl.
- Add the remaining 1 tablespoon oil to the pan. Add the zucchini noodles and gently toss until hot and al-dente tender about 3 minutes. Transfer to the bowl, add the pesto and gently toss to combine.
- Squeeze light lemon juice and salt & pepper to taste
