1 lb sweet Italian turkey sausage
½ cup chopped onion
2 cups chopped pumpkin
3 cups chopped kale
4 cups chicken broth
4 cups water
1. Cook sausage in a medium sized saucepan. Add onions and sauté until translucent. Pour the broth and water into the saucepan and bring to a boil-reduce heat.
2. Add the kale and pumpkin and simmer until the pumpkin is soft, about 20 minutes.
3. Serve hot, with a pinch grated Parmesan cheese and crushed red pepper flakes if desired.
Note: We typically want to avoid all winter squashes on the Hello Healthy Box diet. However, since pumpkin has the lowest carb, we sneak them in every once in a while.
