A Skinny Dip is your favorite guilty pleasure burger with no top, no bottom - aka bunless and guilt free.Here is the mac daddy of them all... The Big Mac Skinny Dip.
1lbground beef (4 oz per serving)
1tbspbutter or ghee
salt and pepper(about 1/2 tsp each)
6cupsromaine lettuce, chopped
2medium pickles, sliced
1/2onion, diced(omit if you desire a lower carb count)
1tomato, chopped
1cupshredded cheese(optional, omit for more calorie restriction)
Sprinkle with sesame seeds optional
FOR THE SPECIAL SAUCE:
1/2cup mayo
2tbsp white vinegar
2tbsptomato paste
1tspmustard
1/4tspgarlic powder
1/4tsponion powder
1small dill picklefinely diced

DIRECTIONS for BIG MAC SKINNY DIP (SALAD):

Heat a skillet over medium heat and add butter. Once the pan is hot add in the beef and break it into small bits. Season beef with salt and pepper. Cook, stirring occasionally, until the beef is browned, about 7-8 minutes. Remove from heat.
While the beef is cooking, make the special sauce. Combine all of the sauce ingredients in a bowl and mix well with a whisk. Refrigerate while you make the rest of the skinny dip.
Prepare the lettuce, onion, pickles, tomatoes, and cheese (optional) as noted.
Now, plate and serve. Mix the ingredients together in a large bowl or make individual bowls with a base of greens and add the other ingredients on top. Drizzle with sauce, sprinkle with sesame seeds and enjoy! Without guilt.
Note, you may have extra sauce. If so, it can be kept in the refrigerator for up to 2 weeks.
